Roasted Baby Red Potatoes

Description

The roasted baby red potatoes are crispy on the outside and tender on the inside. Tossed with olive oil and classic seasonings, this potato recipe will be your go to for a holiday meal, weeknight dinner, or weekend brunch. 


Ingredients

  • 2 pounds baby red potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Fresh chopped parsley (optional)

Instructions

  1. Preheat oven to 400 degrees F.
  2. Wash, then cut the potatoes in half.
  3. Rinse the cut potatoes in the colander to remove some of the starch. Pat the cut potatoes dry, then toss them into the mixing bowl
  4. Stir together the potatoes, olive oil, salt, pepper, and garlic powder. Adjust seasoning to your taste. 
  5. Spread the potatoes evenly on a parchment paper lined sheet pan.
  6. Place the potatoes cut side down.
  7. Bake for 30 minutes or until the potatoes are golden brown on the cut side and fork tender.
  8. Remove from oven and garnish with the fresh parsley (optional).
  9. Enjoy!

Notes

  1. Dry the potatoes completely before mixing with the oil.
  2. Cut the potatoes into equal sizes.
