Description

Tortellini soup with sausage and spinach is an easy one pot recipe that you will make over and over again. This one pot soup recipe is no fuss and ideal for weeknights or those chilly days that you need a comforting dinner idea.


Ingredients

  • 19 oz frozen cheese tortellini
  • 1 lb ground Italian sausage
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken stock
  • 1 can (28 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/2 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups fresh spinach
  • 1/3 cup fresh chopped basil (optional)
  • shredded Parmesan cheese (optional)

Instructions

  1. In a Dutch oven or large pot, cook the Italian sausage over medium heat until browned, crumbling as it cooks.
  2. Drain the grease and add the diced onion and minced garlic. Cook until the onion is soft.
  3. Add the crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Stir in the tortellini and cook for the time specified on the package. 
  5. Remove from heat and stir in the heavy cream, spinach, and chopped basil (if using). Stir well until the spinach starts to wilt. 
  6. Serve and top with parmesan cheese (if desired).

Notes

  • Don't overcook the pasta. It will get mushy, and no one wants mushy pasta.
  • Don't boil the soup once you add the heavy cream.
  • Swap out the Italian sausage for spicy sausage for a bit of heat.
  • For a slightly lighter soup, swap the Italian sausage for turkey sausage. 
  • You can use refrigerated tortellini in place of the frozen, the time will just be reduced. Use the time instructions on the packaging.
