- 12 ounces kielbasa or smoked sausage
- 1 1/2 pounds baby potatoes
- 2 tablespoons olive oil
- 1/2 teaspoons salt
- 1/2 teaspoons black pepper
- 1/2 teaspoon garlic powder
- 1/2 red onion (optional)
Instructions
- Preheat the oven to 400°F.
- Slice your baby potatoes in half, peel and dice the onion into 1/2-inch pieces, and cut the kielbasa into 1/2-inch slices.
- Line a sheet pan with parchment paper for quick and easy cleanup.
- Add the potatoes, onions (if using), olive oil, salt, pepper, and garlic powder to the pan. Toss everything well to coat evenly. A medium bowl can also be used to coat the ingredients.
- Spread the potatoes out in a single layer, cut side down.
- Bake for 20 minutes.
- Remove the pan from the oven and add the sliced kielbasa to the potato bake, spreading everything evenly across the sheet pan.
- Return the kielbasa and roasted potatoes to the oven and bake for another 15–20 minutes, or until the potatoes are tender and the kielbasa is sizzling hot.
- Serve it hot and straight from the pan.
Notes
- Place the potatoes cut side down for maximum crispness.
- For larger baby potatoes, slice into even-sized rounds.
- Any type of baby potatoes can be used, such as baby reds.
- Don't overcrowd the sheet pan. Make sure everything is evenly spread out.
