Mozzarella Pasta Salad

Description

This easy mozzarella pasta salad is fresh and flavorful and ideal as a side dish, for a potluck, barbecue, or backyard party. Pasta is combined with fresh tomatoes, cucumbers, mozzarella, and a light dressing for a crowd favorite side dish. 


Ingredients

  • 12 dry oz rotini pasta
  • 8 oz mozzarella pearls
  • 10 oz grape or cherry tomatoes, cut in half
  • 1 chopped cucumber
  • 1/4 red onion, thinly sliced
  • 1/4 cup chopped fresh basil

Dressing

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar 
  • 1/2 tablespoon Italian seasoning 
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the pasta according to the package instructions to al dente. We do not want to overcook the pasta.
  2. Drain and rinse the pasta in a colander under cold water to stop the cooking.
  3. While the pasta is cooking, cut the tomatoes in half, thinly slice the onion, chop the cucumber into bite-sized pieces, and chop the basil, if using.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
  5. In the large mixing bowl, combine the pasta, mozzarella pearls, tomatoes, cucumbers, onion, and dressing. Add additional salt and black pepper to taste.
  6. Chill for at least 30 minutes, then mix in the chopped basil before serving.
  7. Enjoy!

Notes

  • Use fresh mozzarella for the best flavor.
  • Salt the water when cooking the pasta.
  • Be sure to add the basil just before serving to keep it fresh.
  • Instead of mixing the dressing in a bowl, pour the ingredients into a mason jar and shake well to combine.
  • Store in an airtight container in the refrigerator for up to 4 days. Toss with a bit of olive oil before serving.
  • Add grilled chicken, pepperoni, or your favorite protein for a fulfilling meal.
  • Add more variety, such as chopped bell peppers, roasted red peppers, or olives.
