Description
Chorizo queso dip is one of those snacks that you can’t stop eating once you start. It’s rich, cheesy, and loaded with flavorful chorizo, taking plain queso to a whole new level. This dip is warm, melty perfection and always a crowd favorite.

- 1 pound white American cheese
- 2/3 cup milk
- 1/2 pound chorizo
- 4 ounce can green chiles

Instructions
- Brown the chorizo in a medium saucepan until fully cooked, breaking it into small crumbles.
- Drain the grease and transfer the cooked chorizo to a paper towel–lined plate. Pat the chorizo gently to remove excess oil and wipe the pan.
- Add cubed or sliced American cheese and the milk to the pan over low heat. Stir constantly so nothing sticks.
- Once the cheese is completely melted, stir in the undrained green chiles and the cooked chorizo. Mix well.
- If it’s too thick, add a splash of milk—just one tablespoon at a time—until it’s perfectly creamy.
- Grab your favorite tortilla chips and dig in while it’s warm and dippable.
Notes
- Want it spicier? Swap the green chiles for diced jalapeños.
- Reserve a bit of chorizo to sprinkle on top for a little extra flair on the presentation.
- Serve the queso in a small slow cooker or warming dish to keep it perfectly melty.
