Tortellini soup with sausage and spinach is a one pot meal that will leave everyone asking for seconds. This hearty dinner recipe features cheesy tortellini, savory sausage, a creamy broth, and fresh spinach.
Tortellini soup is one of my favorites when I need something simple before I head out to my night shift. This recipe is also ideal for weeknights, fall get togethers, and cold winter evenings. I also love Hashbrown Potato Soup when it is a chilly evening.

- Ground Italian Sausage - The savory Italian sausage gives this soup a flavorful base.

- Chicken Stock - The chicken stock is the liquid base that flavors the tortellini as it cooks.

Instructions

Step 1
In a Dutch oven or large pot, cook the Italian sausage over medium heat until browned, crumbling as it cooks.

Step 2
Drain the grease and add in the diced onion and minced garlic. Cook until the onion is soft.
Step 3
Add the crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.

Step 4
Stir in the tortellini and cook for the time specified on the package.

Step 5
Remove from heat and stir in the heavy cream, spinach, and chopped basil (if using). Stir well until then spinach starts to wilt.

Step 6
Serve and top with parmesan cheese (if desired).
Tips for the best Tortellini Soup WIth Sausage and Spinach
- Don't overcook the pasta. It will get mushy and no one wants mushy pasta.
- Don't boil the soup once you add the heavy cream.

Variations
- Swap out the Italian sausage for spicy sausage for a bit of heat.
- For a slightly lightened up soup, swap out the Italian sausage with turkey sausage.
- You can use refrigerated tortellini in place of the frozen, the time will just be reduced. Use the time instructions on the packaging.
