This is especially important on busy nights when I’m heading into a night shift and don’t want to spend hours cooking. With simple ingredients, one pan, and crispy roasted potatoes paired with smoky kielbasa, this meal comes together in 45 minutes.

- Baby Potatoes – Yellow and red potatoes are ideal, because they crisp beautifully with a creamy flavor.
- Kielbasa – Choose your favorite brand of kielbasa or smoked sausage. I prefer using all beef. You could even use turkey sausage.
- Olive Oil – Helps everything roast up golden and delicious. I almost exclusively use olive oil in all my recipes.
- Salt, Black Pepper & Garlic Powder - Classic seasoning that brings out the best of this recipe.
- Onion (optional) – Totally up to you. I love using red onions; they brown up and caramelize so sweetly.
Instructions
Step 1
Preheat the oven to 400°F.

Step 2
Slice your baby potatoes in half, cut your kielbasa into ½ inch slices, and peel and dice the onion into ½ inch pieces (if using onion).
Step 3
Line a sheet pan with parchment paper for quick and easy cleanup.

Step 4
Add the potatoes, onions (if using), olive oil, salt, pepper, and garlic powder to the pan. Toss everything well to coat evenly.
Step 5
Spread the potatoes out in a single layer, cut side down.

Step 6
Bake for 20 minutes.

Step 7
Remove the pan from the oven and add the sliced kielbasa to the potato bake, spreading everything evenly across the sheet pan.

Step 8
Return the kielbasa and roasted potatoes to the oven and bake for another 15–20 minutes, or until the potatoes are tender and the kielbasa is sizzling hot.

Step 9
Serve the kielbasa and potatoes hot and straight from the pan.
